Butternut Squash and Apple Salad

Here's a Fall favorite to share!


Ingredients:

  • 1 butternut squash, peeled and cubed

  • 2 apples, chopped

  • 1/2 cup chopped pecans

  • 1/4 cup maple syrup

  • 1 tablespoon olive oil

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

Directions:

  1. Preheat oven to 400 degrees F (200 degrees C).

  2. Toss the butternut squash, apples, and pecans with the maple syrup, olive oil,salt, and pepper.

  3. Spread the mixture on a baking sheet and roast for 20 minutes, or until the butternut squash is tender.

  4. Serve warm or cold.

  5. ENJOY!
